Ingredients
1 whole mackerel with head and bones, around 2 ½ lbs
1 teaspoon of ground white pepper
2 teaspoons of salt
Directions
- Start by cleaning the fish and then rinsing it with cold water. Pat the fish dry with some paper towels. By using a sharp knife, filet the fish along the bones from the tail until towards the head. Continue repeating this step for the other side of the fish.
- Prepare a bowl to put the fish meat. Then, take a spoon and use it to scrape off the fish meat from the skin of the fish fillet; starting from the tail upwards. Ensure that you scrape off all the flesh from the skin. Once done, throw away the skin. Make sure to scrape off the fish meat from the bone as well.
- Next, put all the fish meat onto a chopping board. Chop the meat for about 10 minutes.
- As you chop, you’ll notice that the fish will become sticky. Add in salt and pepper then continue chopping for another 10 minutes until it becomes a fish paste.
- Wet your hands. Take a tablespoon of the fish paste and place it onto your palm and shape it into fishballs.
